Tasty Vegetable Biryani / Veg / Homemade / Scrumptious / Biryani By Sara...

Biryani is a South Asian mixed rice dish with its origins among the Muslims of the Indian subcontinent. It is popular throughout the Country (Pakistan)
This vegetable biryani recipe is very simple,easy & scrumptious. It's a most satisfying recipe for my vegetarian viewer's.....hope you all will love and enjoy.

Ingredients for rice:
Basmati Rice 4 cups (Soaked for 30 minutes; measure before soaking ) 
Bay leaves 4 to 5
Black pepper 10 to 15 
Black cardamom 2
Green cardamom 4
Cinnamon stick 1 & half inch piece 
Cloves 4 to 6
Anise star seed 2
Salt 1 & half tbsp 
White vinegar 2 tbsp 
In hot water add soaked rice,salt and all whole spices and let the rice boil....when it starts to boil pour in vinegar stir well....let them boil;when rice 3/4 done drain them in a strainer and set aside.

Ingredients:
Onion sliced 2 medium size 
Ginger garlic paste 1 & half tbsp 
Tomatoes 4 chopped
Yogurt Half cup 
Potatoes 2 medium cut in cubes 
Carrots 4 cubes about 1 & half cup
Peas 1 & half cup 
Cauliflower 1 cup
Chicken stock cubes 2
Salt 1 tbsp  (adjust according to your taste ) 
Red chilli flakes 4 tsp (کٹی لال مرچ)
Coriander powder 1 tbsp (دهنیا پاوڈر)
Turmeric powder half tsp(ہلدی)
All spice powder half tsp ( گرم مصالحہ )
Nutmeg powder 1/4 tsp (جائفل )
Mace powder 1/4 tsp (جاوتری )
Cumin seeds 1 tbsp (زیرہ)
Oil half cup 

Ingredients for topping 
Almonds roasted half cup 
Cashew nuts roasted half cup 
Brown onion 1 cup
Coriander leaves 4 tbsp 
Mint leaves 4 tbsp
Yellow food color 2 pinch or saffron few strands 
Soak in 4 tbsp of milk
Butter or ghee or oil 2 tbsp 

Method:
Heat oil add onions cook until translucent.
Add in ginger garlic paste cook for 1 mint.
Add tomatoes 1/2 cup water and all other spices except nutmeg and mace stir well cook with lid on until tomatoes become tender and oil separates. 
Add yogurt stir and add all veggies stir well and cook with lid on on medium flame for 7 mints Then remove lid and cook on medium high flame until all water dry.

(Vegetables will become tender in that time we don't need any extra water or more time because we don't need mushy veggies)

Add in chicken cubes & nutmeg and mace powder mix well and cook for a minute more.
In the mean time Water will dry and Oil separates off flame and veggies are ready for layering in rice.

Then layer rice with cooked Vegetable.(Rice then veggie layer again rice ànd vegetable then again rice and 
On the top add all topping ingredients and let them simmer (dum دم ) for 7 to 10  minutes. 
And biryani is ready enjoy with mint or cucumber raita.

Add Tomatoes & Some Water

Add Spices & Cook Until Oil Separates

Add Yogurt 

Add all Vegetables & Cook

Let the Veggies Cook, Boil Rice

Add Chicken Stock Cubes Mix Well

Layer Veggies Over Rice, Repeat Layer 

Add the topping Ingredients & Simmer

Ready to Serve
