Kabuli Pulao / Afghani Pulao By Sara's Haute Cuisine

Kabuli pulao / Afghani pulao is an Afghan dish, a variety of pilaf, consisting of steamed rice mixed with raisins, carrots, and lamb. It is one of the most popular dishes in Afghanistan and is considered the Afghan National dish.
Taste is very lite and delicious.we wouldn't feel any heavy ness on our stomach after eating.

Ingredients
Basmati Rice  750 gm soaked for 1 hours
Mutton ½ kg
garlic cloves a handful or 1 pod
Salt 1 tbsp
Water 4 cups
Black cardamom 3 grind coarsely
Black pepper  1 tbsp grinds coarsely
Cinnamon 1 inch piece grind coarsely
White cumin 1 tbsp grind coarsely
Oil ¼ cup + ¼ cup
Sugar  3 tbsp + 1 tbsp
Salt  1 ½ tsp
Raisins half cup
Carrot 250 grams thinly sliced (weight before cutting)
onion ½ cup
Method
Boil mutton with garlic , salt, water till mutton tender. Heat ¼ cup oil add ½ cup onion fry until brown add boiled mutton, fry till light golden, keep aside.


Method for rice
Heat ¼ cup oil add 3 tbsp sugar and caramelize till light golden, add in 4 cups water (I added remaining stock which we save after boiling muttin) with 1 ½ tsp salt, add soaked rice, cook on high flame till boiling and half water dries, add to it coarsely grinded whole spices, mix well, put mutton on top of rice & leave it on dum.
In another frying pan heat 1 tbsp of oil & 1 tbsp of sugar let it caramelize then add in carrots and raisins fry for 2 mints or until coated well,off flame and set it aside.
To assemble
Remove rice in a platter, top with fried carrots and raisins.
