Instantaneous Rabri/Easy & perfect Rabri Recipe By Sara's Haute Cuisine

An instantaneous recipe of rabri in which I used bread to thicken.It reduces the time and energy than the original one; where we spend laboriously stirring the milk till it thickens, it is also lower in fat content,low cost,takes few minutes and yumiculous.

Ingredients : 
Full fat milk 1/2 liter 
Milk powder 1/2 cup 
Fresh Breadcrumbs (take 3 slices of bread remove corners and chop them in a chopper machine)
Cashew nuts powder 1/2 cup
Condensed milk 1/2 to 3/4 cup (depends how sweet you like)
Cardamom powder 1/2 tsp 
Saffron a pinch (optional ) 
Ghee/clarified butter or butter 1 tsp 
Almonds & pistachio 2 tbsp sliced 

In a pan add both milk and let it boil.
When it starts to boil add fresh breadcrumbs and cashew powder mix well and cook for 5 to 7 mints then add in condensed milk,cardamom powder and saffron mix well,meanwhile it will starts to thicken.
Add in ghee and nuts mix well and cook for couple of minutes then remove from heat.
Let it cool completely at room temperature. 
It becomes more thickens as cooling happens.
Enjoy it as it is or on falooda or with gulab jamun, malpura or on kulfi etc.

Instantaneous Condensed Milk//Homemade||quick||easy & perfect By Sara's Haute Cuisine

Traditional condensed milk can takes hours to make with endless stirring which is very tiring.
This instantaneous, easy and effortless recipe for homemade Condensed milk will be ready in just 5 minutes with low cost and perfect results.

Ingredients : 
Powder milk 1 cup 
Granulated sugar 1/2 cup 
Water 1/2 cup 
Milk 1/4 cup 
Cornflour 1 tbsp 
Baking soda a pinch
Ghee or butter 1 tbsp leveled
 Add all ingredients in a pan mix well.
Cook on medium flame stir continuously; until sugar dissolves,It will take 5 to 7 mints. 
That's it off flame let it it cool completely at room temperature. 
Pour in any glass container and keep it in refrigerator.
Beautiful, thick & glossy condensed milk is ready to use you can use in any dessert.
It's completely perfect & hygienic.

Easy Homemade Falooda Sev/Noodles No Machine 3 Ways By Sara's Haute Cuisine

Again a Very quick and easy recipe.you can make this at home with very low cost and most importantly these are hygienic,you can make without sev machine i have introduced 3 methods and it take just 5 minutes so let's get started.....

ingredients:
corn flour/corn starch 1 cup 
sugar 3 to 4 tbsp 
water 3 cups 
mix all ingredients in a pan then cook on medium heat for 3 to 4 mints until it becomes transparent and glossy.immediately fill it in a bottle and start making sev in iced chilled water.
keep them in that water for 15 to 20 mints in refrigerator or until you used them.
you can save them for 2 to 3 days or more in refrigerator.

(you have to work with hot batter once it will cool it Will become hard and won't work perfectly)

Method No 1
put that batter in a cloth piping bag attached with round writing nozzle and start making sev in iced water.
(this method is little tricky because batter is hot so you have to work carefully with gloves on your hands)

Method No 2
i used a cookie press; grease your cookie press with some oil then fill it will that batter and start making sev in iced water. it's very safe & easy😉

Method No 3 
use any extra clean bottle with that nozzle. 
i used a chocolate sauce bottle it's nozzle was very perfect for sev so i have filled it with batter and start making sev by pressing the bottle in iced water.

These babies are the cute looking mini pizzaz and with colourful toppings.They are best individual servings. They are easy to make and look super cute also. These are best for the kids and also homemade and perfectly healthy and clean. 

Ingredients for pizza dough : 
All purpose flour 5 cups 
Salt 2 tsp 
Sugar 3 tsp 
Oil 10 tbsp 
Yeast 5 tsp 
Baking powder 1/4 tsp 
Lukewarm water for kneading dough

Ingredients for chicken marinade : 
Boneless chicken 500 grms cut in julienne 
Garlic paste of 3 large cloves 
1 egg
Sesame seeds 1 tbsp 
Paprika powder 1/2 tsp 
Red chili powder 1 tsp 
Oregano 1/4 tsp 
Corn flour 1 tbsp 
Plain flour 1 tbsp 
Salt 1& half tsp 
Oil 1 tbsp 
Lemon juice 1 tbsp 
Marinade chicken with All ingredients;cover with plastic wrap and put it in refrigerator for an hour.
Later shallow fry them in hot oil in a frying pan. 
Don't overcrowded your pan.
When they become nice & golden transfer them on a grease proof paper and let them cool.

Ingredients for toppings:
Pizza sauce you can use store bought or substitute it with ketchup & chili garlic sauce (ratio 1:1)
Yellow bell pepper 1 cut in small chunks 
Green bell pepper 1 cut in small chunks 
Tomato 1 without seeds cut in small chunks 
(U can use red bell pepper too)
Black olives 
Mozzarella cheese 
Oregano 
Red chilli flakes  (optional ) 

When dough rise;punch it down and make 13 equal size balls and then roll it in 6" diameter....place them on baking tray spread pizza sauce then a tbsp of cheese,chicken chunks ,bell peppers, olives,again cheese but this time in generous amount and finally sprinkle little bit of oregano and chili flakes if you want to add and then bake in a preheated oven at 180ºC for 10 to 12 minutes or until done.

Split Bengal Gram Salad / Healthy & Easy Lentil / Chana Daal Salad By Sara's Haute Cuisine

Chana daal salad is delicious, nutritious and easily digested. Good for Red Blood Cells, Pregnant Women.
Cooked Chana Dal is rich in Folate, Vitamin B9 or Folic Acid Good for Heart Excellent source of Protein for Vegetarians.Good for Skin,High Fiber,Strong Bones and Teeth,Cooked Chana Dal is rich in the mineral Phosphorus. 

Ingredients for dressing :
Tamarind pulp 1/2 cup
Salt 2 tsp 
Red chili flakes 2 tsp 
Chaat masala 1 tbsp 
Cumin seeds 1 tsp 
Extra Virgin olive oil 3 tbsp 
Tomato ketchup 2 tbsp heaped 
Mix all ingredients well & set aside. 

Other ingredients : 
Split Bengal gram(channa daal) boiled 2 cup
Cucumber chopped 1 cup
Red Cabbage 1 cup 
Cabbage 1 cup 
Onion chopped 1 medium sized 
Tomato chopped 1 large seedless
Green chilies 3 to 4 sliced
Mint leaves 2 tbsp 

Add all ingredients in a large bowl ; pour over prepared dressing /sauce & mix well and enjoy.

Healthy Date & Almond Milkshake || Khajoor aur Badam wala Doodh || By Sara's Haute Cuisine

This is a Very healthy and yumiculous milkshake recipe,you can serve it hot or cold according to your choice or according to weather; very easy ,very quick ,good for kids,very healthy for you when you are fasting so let's start with very few ingredients 👇

milk 1 liter 
pitted dates 30 
Almonds without skin (soak in hot water for couple of mints then skin will remove easily)
sugar 3 to 4 tbsp (if you are on diet then don't add sugar)
soak dates and almonds in hot water for 3 to 4 hours then blend it with remaining water and sugar;now add in milk and blend well.
pour in glasses...serve and enjoy.

《Ingredients for chaat》
Boiled & cool Chickpeas 4 cups
 (Soak overnight with some salt for best results )
Boiled & cool potatoes 3 cups
 (first peal potatoes wash and cut in cubes then boil with bit salt until done)
Pakoriyan/phulkiyan 3 cups cool

(U can increase or decrease the quantity of any ingredient according to your choice)

Salt 1 tbsp 
Red chilli flakes 2 tsp heaped 
Chaat masala 2 to 3 tsp 
Cumin seeds 1 tbsp (roast for best results)
Tomatoes finely chopped 2 medium sized 
Onion 1 big chopped 
Green chillies 3 to 4 sliced 
Mint leaves half cup chopped 
Coriander leaves half cup chopped 
Lemon juice 1/4 cup 
In a large bowl add chickpeas, potatoes & Pakoriyan and put all veges and spices mix well and chaat is ready. 

(Adjust chillies & chaat masala according to your taste buds how hot u want ur chaat)

《Ingredients for bara's/ vada  》
Daal mash 1 & half cup soaked for 2 hours 
Daal channa half cup soaked for 2 hours 
Salt 1 tsp 
Red chilli powder 1tsp 
Cumin seeds 1 tsp 
Water half cup 
Baking soda /Meetha soda / Soda bicarbonate half tsp 

Method : 
Put all ingredients in blender except baking soda & blend well. Consistency should be thick not runny. 
After blending transfer it in a bowl and beat with the help of spoon for 5 mints Then mix in baking soda and deep fry on medium flame in hot oil until nice & golden. 


Soak in warm water for 30 seconds then remove from warm water & add in tap water press with both of your palm squeeze water let them cool completely. 
Now ready to add in yogurt. 

(((U can also freeze them minimum for a month in a ziploc bag )))

Ingredients : 
Gram flour / baisen 3 cups
All purpose flour 1 cup 
Salt 1 tsp 
Red chilli powder half tsp 
Baking soda half tsp 
Water for making batter
Instructions : 
1. Take both flour in a bowl and all other ingredients . Add small amount of water to make batter. (Add water little by little) make batter with ur hand & beat well with hand ,Consistency should be thick, let the batter rest for 10 to 15 minutes. 
(You can use whisk too but better to mix with hand)
2. Heat oil in karahi/ wok and drop 1 teaspoon batter into hot oil.
Or u can use bondi/phulki mold for making phulkiyan. 
And if you don't have mold then you can make as shown in video😉
Deep fry phulkis till light golden brown in color and take it out from the oil on a kitchen paper.
3. Let them cool completely & store in airtight container or in a zip lock bag & put in refrigerator. 
4. When u want to use soak in hot water for 20 to 30 seconds drain it and add in yogurt or whatever u want to make.

Ingredients :
Fresh milk 1 liter 
Evaporated milk 1/3 cup 
Condensed milk half cup 
Almonds + pistachio + cashew 25 grams each (2 tbsp each) grind them all in a fine powder Saffron few strands 

Instructions :
in your cooking pot add fresh milk+condensed +evaporated.

when it starts to boil add grinded nuts cook for 5 to 7 mints on medium low heat.

add saffron mix well....serve cold or hot😊

Imli ki Chatni / Tamarind & Date Dip By Sara's Haute Cuisine

Ingredients : 
Tamarind pulp 3/4 cup 
Dates 10 to 12  (pitted and soaked in hot water for half an hour )
Salt 1 tsp 
Chaat masala 1 tsp 
Sugar 2 tbsp 
Put all ingredients in a blender and blend well. 

If you want thin consistency then you can add half to 3/4 cup of water and the blend.
Pour in your serving bowl and enjoy it with any of your favourite snack.
This chatni makes a superb combination with dahi baray or with channa chaat or samosa chaat.....etc
Put it in refrigerator for 7 to 15 days it will remain fresh as  the day 1st.
I always prefer fresh because it's not so difficult to make.
