Lemon rice recipe is one of the most common dish of south India. It is usually eaten alone or with some pickles, yogurt, raita or chatni.
prepared with stir fry steamed rice in spices,Bursting with lemon flavor, this is a delicious way to turn plain rice into an exotic dish.
They add peanuts and some time cashews too but I am making in my way😉without these ingredients.
So let's get started.
Ingredients :
Rice boiled 3 & half cup (measure before soaking) u can make with leftover rice too😉
Oil or butter half cup
Mustard seeds/Rai dana1 tbsp
Cumin seeds 1 tsp
Turmeric powder 1 tbsp
Lemon juice 1/4 cup
Lemon rind 1 tsp
Salt 1 tsp
Button red chillies 4 to 6
Green chillies 4 sliced
Coriander leaves 2 tbsp
Mint leaves 2 tbsp
Curry leaves 12 to 15
Instructions :
Heat oil in your cooking pan add mustard seeds and cumin seeds when they start to splutter add all other ingredients except mint and coriander cook for a minute then add rice and mix well.
At the end add mint and coriander leaves mix and transfer in serving dish and enjoy.
