Searing Grilled Chicken Salad With Chimmichuri Sauce By Sara's Haute Cuisine

This chicken salad is a quick and healthy version of a complete meal. It has all the veggies;chicken beautifully marinated and gives you that enormously delicious taste. And the combination of chimmichurri with it is just beyond perfection, and also copacetic for your #Ramadan menu.And an ideal meal for #diet #conscious people.Make and enjoy.

Ingredients for chicken marinade : 
Chicken breast 1 
Garlic paste 1 tsp 
White vinegar 1 tsp 
Soya sauce 1 tsp 
Lemon juice 1 tsp 
Mustard paste 1/2 tsp 
Black pepper 1/2 tsp 
Salt 1/2 tsp 
Pound chicken breast with a steak hammer. 
Put all ingredients in a bowl,mix well.
Marinade chicken,cover your bowl with plastic wrap and refrigerate it for at least 2 hours or overnight. 
(Overnight is better option)

Ingredients for salad:
Cucumber 1 cup 
Cabbage 1 cup 
Red cabbage 1 cup 
Carrots 1 cup (all vegetables cut into julienne )
Tomato 2 (seedless cut into julienne )
Sweet corns 1 cup
Black olives 10 to 12 
Salt 1 tsp 
Black pepper 1 tsp 
Extra Virgin olive oil 3 tbsp 
Juice of 1 lemon 
Salad leaves 2 cups(cut in small pieces with hand )

Add all ingredients in a bowl & mix well,set aside. 

Now time to cook marinated chicken breast. 
Take out marinated chicken from refrigerator before half an hour of cooking so that it will come on room temperature. 
Now heat your grill pan;grease with oil and put chicken and cook on medium flame for 7 to 10 minutes from each side.
When it's done cut it into slices and place it over salad and add some chimmichurri on top of chicken pieces and some black olives; serve,enjoy
